Big Cake Little Cakes : 6" layer cake on a 14" board... I usually make this with 10-12 cupcakes so the middle cake is surrounded... but the customer didn't need that much cake! It was only to serve 6 but they desperately wanted this set up as you can still carry out the cupcakes singing "Happy Birthday" at the top of your voice!

Fabulous cookie cutters found in Hobbycraft... only £5 for 3 cutters!! My little boy LOVED these and had one as an after nursery treat each day until they were gone!

I coloured the cookie dough with a little Grape Violet to make them a cool purple biscuit!!

Painted with metallic dusts mixed with clear alcohol... very shimmery!

Paula & John talked about their wedding invitations when we met for the consultation... we thought it would be lovely to introduce the heart blossom tree from the invitations to the top cake then continue the them for the cupcakes.

Flavours Dark Chocolate Mud top cake, Madagascan Vanilla, Limoncello & Spicy Carrot cupcakes.

Beautiful setting at Park Barn, Holt... a great venue where all the guests could stay for the weekend.

Big Cake Little Cakes : Pirate's Cove

I love, love, loved making this cake... from the tiny treasure chest complete with bounty to the treasure maps and pirates dressed in their stripes... lots of fun!! This was accompanied with an additional 12 cupcakes so that each party guest could take 'some pirate' home with them!

Handpainted Birdcage cookies... the cage is painted in gold, but that doesn't really show too much on this photograph... they had a lovely shimmer when they caught the light... probably didn't help that I photographed these on a dismal, grey day :0(

The bride was over the moon with these, so that's great... wahay!

A lovely bride ordered Iced Cookies from me as wedding favours... she ordered these little beauties for the children, Norwich City Football Shirts for the gents and handpainted Bird Cage Cookies for the ladies...

Peppa Pig was made from a template I created so they did take quite a bit longer than using ready made cutters... each bit had to be individually cut... thinking about it, I could've actually made a range of Peppa, George, Daddy Pig, Mummy Pig, their car, their house, etc. and then they could've all been different... wouldn't have taken that much longer... I have the template if anybody wants it :D xxx

This wedding cupcake tower consists of 75 large cupcakes, 75 mini cupcakes and a giant cupcake on the top tier... a mixture of Madagascan Vanilla and Limoncello with buttercream swirls, embossed fondant tops and poured fondant.

I quickly photographed the Giant Cupcake and some of the Rose topped cuppies before I left for the venue... Hunters Hall, Swanton Morley, is notoriously dark with no natural light at all in the marquee... resulting in pretty awful photographs of the Cupcake Tower once set up :0( ... Ivory cakes photograph so much better in natural light... usually, I take them outside under the gazebo and photograph them there as the gazebo eliminates any dark, harsh shadows resulting in a great photo... as you'll see when I post the pic of the tower (in the marquee) the quality is very different!

Anyhoo... this is a Madagascan vanilla top cake, baked in the Wilton tin, then popped in a white chocolate mould and frosted with rose swirls. All handmade roses... love this colour scheme!

Oat, Raisin & White Chocolate Cookies

... with my favourite flavour... cinnamon!

Makes about 30 digestive biscuit size cookies...

Ingredients
270g butter
160g caster sugar
160g soft dark brown sugar
2 medium eggs
380g plain flour
1 tsp bicarb of soda
0.5 tsp ground cinnamon (YUM!)
110g rolled porridge oats
220g raisins
100g white chocolate chunks

What to do...

Preheat oven to 170°C
Cream together butter and sugars until light and fluffy
Add eggs, one at a time, mixing and scraping bowl after each addition
In a separate bowl sift together the flour, bicarb of soda and cinnamon... add the oats
Add flour to butter mixture and beat until well mixed, stir in raisins and white chocolate chunks with a wooden spoon until evenly dispersed
Dollop spoonfuls of cookie dough onto a baking sheet prepared with greaseproof paper, allow for spreading!
Bake for about 10-12 minutes.
Leave to cool slightly before removing from trays, then cool on rack.

Let me know what you think... I made these for my brother's girlfriend who'd just had an ickle baby by C Section and wasn't enjoying the hospital food... after 5 of these little treats she was able to come home... should call them magic cookies!

Ok... so this was the 2nd cake that I made for my little girl's birthday... she has a 'friends party' and a 'family party' so I have to make 2 cakes... more often than not along the Hello Kitty theme. I long for the day when it's something different, lol!

The bottom tier is an 8" Chocolate Mud cake, filled with Dairy Milk ganache. The top tier is a 6" Madagascan vanilla sponge, coloured pink, of course... filled with vanilla buttercream... both delicious!

I had to use a bit of dried spaghetti for the balloon string as I was lost for ideas... hugely worried it would snap... any other suggestions most gratefully received!

Oh well... I'm off to make 24 sugarpaste ponies! Sam x

The first Hello Kitty birthday cake of the weekend, ordered by my little girl for her 6th Birthday - this one was for her party with her school friends.

A 6" Madagascan vanilla sponge in 3 layers, sandwiched together with chocolate buttercream and a Dairy Milk ganache finish.

My first attempt at a bow and a candle... have wanted to do these for ages after seeing them pop up here on Flickr... not sure who started the trend... either Dot or Vanessa I think!

Anyway, Ella LOVED it... I put some sparklers in it too... fabulous ;D

White Chocolate Mud Cake Recipe

I recently tried this recipe as I wanted something 'white' but not light and airy sponge! The smell whilst this was baking was the most divine, sweet chocolatey smell ever... worth it just for that ;D

Anyway, here it is... with this I made 1x 6" cake and 12 cupcakes... I'm not sure it works so well for cupcakes as the sponge is very firm, I always feel cupcakes should be light and airy and the top cakes and larger cakes should be a firmer sponge... but that's just me!

Ingredients
300g butter
300g white chocolate
300g plain flour
150g self raising flour
400g caster sugar
3 eggs
1.5 tsp vanilla extract

Method

Heat oven to 180°C. Grease and line tin with collar that sits about 3cm above top of tin.
Melt butter, 270ml of water in a saucepan, stir until butter has melted.
Turn off heat and add the chopped up chocolate and stir until melted and well combined.
Sift flours, add sugar and pinch of salt, make a well in the centre.
Pour chocolate mix, lightly whisked egg and vanilla extract into the well then stir with wooden spoon until well combined, scraping from edges with a spatula.
Pour into the cake tin.
Now, the baking time is odd... the recipe I followed said 1 hour and 40 mins for a 9" tin, my cake did take about 1 hour 50 mins for a 6"... I'm guessing you're going to have to keep checking your cake after about 1 hour 30!!
Cover with foil half way through to prevent over browning.
Leave to cool completely in the tin on a wire rack.

The cake will keep for up to a week in an airtight container in the fridge, or freeze for up to 1 month.

I layered and covered my tester cake with some milk chocolate ganache (as I had some left over in the fridge)... this worked! Would definitely do that combination again.

Handmade fondant Buzz Lightyear sits on top of this 2 tier stacked caked : 9" Chocolate Mud Cake with Dairy Milk Ganache and 6" Madagascan Bourbon Vanilla with Vanilla Buttercream & Raspberry Jam filling.

I've ventured away from cupcakes for a brief fling with a 2 tier stacked cake!! Buzz himself took longer than the entire cake, lol ;D

This was for my little boy's birthday so I it had to be his favourite character... so pleased with how it turned out... he was over the moon, his little face lit up when he saw it... yay, brownie points for Mummy :D

This was for a racing car mad 50 year old... hope he liked it... loved painting the little details on the racing cars... just wish I managed to make a couple of chequered flags too.

Originally I was going to make 1 big racing car to go on the top of the Giant Cupcake, then I was worried about the logisitics of the car falling off - have had a couple of bad experiences with Giant Cucpakes, even though I've made LOADS of them they still make me slightly nervous, lol! So... I decided to make little racing cars actually racing... until I realised I'd got a little carried away with myself and made them too large to race side by side... oh well, looks like the yellow car was the winner!!! Wanted to keep this quite simple as I think sometimes I can overfuss things... I wanted to add more but left it... want to add a chequered flag but wasn't sure how to make an edible one as I was running out of time... Loved the ribbon I found, so there is chequered flag on there somewhere, lol!

I had to put my other hat on for this task... I was getting a bit fed up with my old promotional postcards so I thought I'd update them... why is it when I design for myself it is sooooo much harder?? Probably because the budget and the deadline can both strreeeeetch!! Anyway, hope you like my new postcard... love these cakes with the handpainted leopard spot and the tiny spot embossing... and the lighting was right on this photo, which is rare for me.

Now it's Autumn I'm back to photographing my cakes in my kitchen with overhead spots, not good for my cakes I can tell you!

150 large cupcakes of the theme "Hope & Love" for a ball in aid of Cancer Research UK. The lovely Jude set of before 7am to collect these and then drive them all the way back to Essex for the event she had raised and funded herself... what a star.

I so hope it was a huge success and that loads of money was raised for such a worthwhile cause that affects 1 in 3 people. I lost my lovely Mum to cancer only 14 weeks ago so I was very keen to help out here, it was tough but therapeutic. Sam x

Had a nightmare with delivering this cake... I drive like Miss Daisy when I'm transporting Wedding Cakes... however, some bozo decided to do 90mph round a tight bend forcing me up the kerb and a bit of sharp breaking... resulting in my beautiful giant cupcake losing it's top layer slightly... from the front it is fine but from the side it is really wonky, I could've cried. You can see a slight ridge from the front where it slipped... next time I will insist on a chocolate casing for Giant Cupcakes I think... just not worth the stress, they are a sod to move!

Thankfully, the bride and groom were lovely about it but I still felt awful as it should've been perfect and it wasn't.

This wedding cake was made with a heavy heart. My lovely Mum passed away on 7 July 2010 with this wedding order happening on 8 July 2010... Anything else I could've turned down but not somebody's wedding.

Fortunately, this was a simple order with regards to the decoration, just lots of pretty sprinkles on Raspberry & White Chocolate, Limoncello and Madagascan Vanilla cupcakes topped off with a Madagascan Vanilla layer cake... it was very pretty but will always look at this with sadness I fear.

The lovely bride was over the moon and her bright and cheerful smile did help loads when I was setting it up... congratulations and I wish you every happiness for your future. x

A notoriously difficult character to capture... ok with my first attempt, though there are many things I would change... those being:

• bigger ears, further apart
• higher arc over the eyes
• wider set mouth/cheeks

And he definitely needs a Minnie to keep that smile on his face :D

These need a dusting of golds and browns to give them a bit more character, just need to let them dry first...

My daughters first 5th birthday cake... a 6" vanilla 3-layer cake surrounded by cupcakes... all in the Hello Kitty theme... I used my previously created moulds to make the cupcake toppers and painted them by hand... modelled Hello Kitty on top of the cake is my first go at character modelling... her head could do with being bigger but I'm happy, and Ella was REALLY happy!! x

I decided to go for real breeds of Corgis instead of using girlie bright colours... the lucky recipient was a real fan and was over the moon with her lovely gift.

L O V E these colours... the first tower I've used real flowers with too... I may have to ask all of my future brides to save some flowers back for the tower, they really do add the finishing touch... may try organza ribbon next time... I've seen that on a few towers in Australia and it is very effective for weddings.

These were so much fun to make... especially as I had to purchase Twilight & New Moon on DVD then watch them while my little boy had his naps... I'm now a fan!! I've ordered the books and can't wait for my friendly postman to deliver them... asap!!!

I'm not usually a huge fan of printed icing, I generally think they're a bit naff... I like to make it all myself by hand so they're unique and individual... however, I wanted to make little photo frames of stills from the film... I think they worked out really well, even though they're prints...

Madagascan vanilla 4-layer cake makes a top little kennel for Snoopy & Woodstock to have a snooze on!!

I made a very last minute decision to have a go at something different... my brother's 40th birthday! Woke up the morning before and thought "I'm going to make that Snoopy cake I saw in that book"... with lots of "you can do it" from my other half and general excitement from the sprogs I thought "ok!"... didn't have time for the cake to settle, had to carve almost as soon as it had cooled... nightmare... very soft and squashy, hence slight wonkiness.

Anyway... I don't plan on making lots more 'bigger than cupcakes' cakes but I L O V E this little beauty and my brother was over the moon with it.

The funny story about these cupcakes is that they originally said 'Mark' and the lovely lady arrived to collect them only to say "they're fantastic, but his name is John!!".... I thought she was joking, luckily she was very easy going and nipped to Tesco for an hour to give me time to change the name... the other alternative was to change her husband!!!!

Cute Dalmation dogs on top of spicy carrot cupcakes... the carrot cupcakes were a bit of a nightmare as they were SO fresh that they were super soft and not as firm as I would've liked to support the sugarpaste weight... now off to bed... let's hope they're still ok in the morning... fingers crossed! I'm so pleased with my Hello Kitty cupcakes... I've seen so many great attempts where the character just isn't quite right... that's the problem with these recognised characters... if one little details isn't right it all looks a bit odd! So... after 4 months of searching online I finally located some moulding putty and made my own Hello Kitty mould... yay! I then made lots of the little cuties and handpainted them ready to take pride of place on top of a vanilla cupcake!

My first attempt at a moulded candy shell for the giant cupcake, I think it gives a much cleaner finish... and it tastes delicious!

This tower consists of 108 large cupcakes, 48 minis and the giant cupcake on the top tier... mix of Madagascan vanilla and chocolate with buttercream swirls, poured fondant tops and embossed sugarpaste tops... decorated with little hearts embossed with the bride & groom's initials.

I hope you like it!

This isn't quite how it was supposed to turn out... I was happily painting white chocolate onto the inside of the Giant Cupcake Pan, thinking it'll just 'pop out' as others have describe it... NOT! The chocolate was finally scraped out with a plastic tool and put in a pot to be remelted for a 2nd attempt on another day... hence the quite simple buttercream base!

These really are very large!! I made a template then used that to cut around on the cookie dough... decorated with sugarpaste and handpainted whiskers... couldn't decide if I should paint on a black keyline but decided against it. Will be making a much smaller template as these would have to be about £5 each!!

Now, being a cupcaker/cookier and not a big caker I didn't have an instant pool of knowledge to call on when I had the Giant Cupcake request... I've done loads of these for top tiers of wedding towers but when they stand along I thought they'd need something 'extra'... so, I thought nice big 11" cake board... and decorate that up... it's lovely to make one of these in stronger colours as they're usually ivory and pastels.

The birthday girl was really into her handbags and shoes so I handpainted a few to top this giant cupcake... I'm loving the results and can't wait to make another one...!

I've made some beautiful Valentines cupcakes this weekend... really pleased with my photos (after the fab photographer from the EDP sorted my camera settings) and I can't get the little gems off my memory card...
